Well, I went and got a nice new 27" iMac with 5K, Mac OS X Sierra and have been trying to trouble shoot this issue with getting Paragon Chat to start.
The Island Rum window opens, it scans the files. I get the play button. I click the play button, and get a green checkmark, and then the COH app icon pops up in the dock and bounces for a second or two, and then nothing.
I read in another thread, that if I saw a blue outline of a window when I choose Show All Windows when right clicking on the icon, that it's something with xquartz.
So I reinstalled it with brew, and same issue.
Here is the error coming up in the log from ~/Library/Logs/Unity/Player.log:

So it's definitely not seeing something. Not sure what to do now. I should also add, that Icon seems to work fine launching.

It's actually because the update site for Island Rum is down due to the ISP's router dealing with DDoS all weekend. They're working on it.

If Island Rum and Tequila grab the same files, then my copy of Tequila is working now.

Well, gave it a shot, it finally opened after I moved the COH client to the .wine folder for it to see it, but when I startup Island Rum, and choose Paragon Chat, it just opens the client, and the same thing happens. No Paragon chat login window.
If I run it from the terminal, wine '/Applications/COH.app/Contents/Resources/transgaming/c_drive/coh/paragonchat.exe'
it starts and gives me the logon for PChat, then starts the client up. It brings me to the create character screen but I can't click on anything. The mouse moves and highlights the slots, but clicking does nothing. Doesn't even look like the click is registering.

That's a known issue with newer versions of Wine. Instead you want to download the Wineskin client and use that:

After you download and extract it, point Island Rum to it and wait for it to patch.

I did do that, thinking that might be a better way to go. But now it's asking for the location of the COH client, and when I point to it, it says it doesn't see it and I can't move on.

There seems to be a bug with the folder selection in Paragon Chat. The workaround is to hit Choose Folder and actually type C:/Program Files/coh in the space at the bottom of the dialog that pops up when you're selecting the folder.

I don't have a Mac to verify, but it sounds like the common file dialog provided by Wine doesn't support the folder chooser mode that Paragon Chat requests.
One possible workaround may be to set Wine's OS emulation to WinXP SP3. If the Vista+ common file dialogs are not available, Paragon Chat falls back to using the old WinNT/2k/XP folder chooser dialog that has a lot less functionality.

It might not support the dialog at all then, because the emulation is already set for Windows 8. :(
