Saw it during Arcanaville's event in the beta server.
I tried viewing the fabled "Nemesis Horse" as well, but...
There was nothing there in place of my character when the demo loaded.
You fought the monstrosity in the last mission of Pandora's Box, part 5. It was only available on the beta server as the last piece of the arc never made it to live by the time it unlocked.

The Nemesis monstrosity (not sure what the actual name given to it was) was actually in the last promo image that Paragon Studios posted to Facebook just prior to the sunset announcement.

It doesn't show up on there, but it's display class is overridden as well. So even though it's technically an AV, it would show as "Monstrosity" instead of Archvillain when you targeted it.
I thought I remembered something about that, but wasn't sure. Glad to know my memory hasn't completely abandoned me in the last couple of months. :)

I accidentally spawned the non-combat version first, and then spawned the combat version for the players to defeat.
The next day on thursday, I logged into Beta and spawned a ton of stuff for players to attack. While circling the area outside of the Vanguard base spawning some Rikti AVs, who should sneak up behind me but the non-combat Nemesis Monstrosity, still wandering aimlessly around the zone. I killed him so players wouldn't try to engage him, and then spawned another combat version. A few hours later, it was gone so some players did in fact kill it.

The whole two-auras for that fight made me make so many grabby hands at the screen!
I fought it hours before the game went down forever it was amazing.
